Lemon & Passionfruit Coconut Slice:

Ingredients For Base:

90g Softened Butter
½ cup Caster Sugar
2/3cup Sifted Plain Flour
1/3cup Sifted SR Flour
1 x 60g Egg
½ cup prepared Lemon Curd
Or Lemon Butter
1 & 1/2 tablespoons Passionfruit Pulp

Method:
Pre heat oven to 180c, beat butter, sugar & egg in a bowl with an electric mixer until light & creamy.
Stir in sifted flours spread this mixture over base of greased 20cm x 30cm lamington pan.
Combine lemon curd & passionfruit pulp, spread over slice base.
Put aside…Mix topping ingredients

Topping:
2 x 60g Eggs Lightly Beaten
1/3 cup Caster Sugar
2 cups Desiccated Coconut

Method:
Beat eggs lightly in a large bowl, beat in sugar then stir in coconut:
Spread the topping evenly over the top of passionfruit & lemon filling

Bake in preheated oven for about 30minutes until golden brown.
Cool then cut into slices while still in pan:

Makes about 20 pieces:
Store in airtight container:
