375g dark choc melts
250g butter, diced
2 and 1/2 cups sifted icing sugar
1/2 cup cream
2 teaspoons vanilla essence
1/2 cup glace cherries
1/2 cup almonds
150g marshmallows, chopped

Put chocolate, butter, icing sugar and cream in a medium size saucepan and stir over medium heat until smooth. Bring to boil, stirring constantly. Boil for 1 minute and stir in vanilla essence.

Transfer to a large mixing bowl, and beat until thickened (approx 2 - 3 minutes), with electric beater. Leave to cool for about 20 minutes or until mixture is still warm. Stir in half the marshmallows and stir until completely melted and no white streaks remain. Allow to cool, but not set. Fold through cherries, almonds and remaining marshmallows.

Pour into a 30cm x 20cm slice tray. Chill until set. Cut into thin slices to serve.
