These Fortune Cookies are splendid

Prep Time: 15 mins
Total cooking time: about 5 minutes per tray
Makes about 30

Ingridients

3 egg whites
1/2 cup icing sugar
45 grams unsalted butter
1/2 plain flower

Preheat oven to 180d/g celsius

Line oven tray with baking paper and draw 8 cm circles on it

Place egg whites in mixing bowl ang whisk until frothy

Add icing sugar and butter and stir until smooth

Add flower and mix until smooth and stand for 15mins

Using a flat bladed knife spread 1 and 1/2 level teaspoons of mixture over each circle

Bake for 5mins or until slightly brown around the edges

Being quick remove the trays by sliding a flat bladed knife under each round place a written message in each cookie

fold in half then in half again over a blunt edged object. Allow to cool on cooling rack.

Repeat until you have used all the mixture.
