Succulent Strawberry Syrup
Tried my hand at making plum jam one day and was very disappointed with the result.
It took much time, energy and sugar.
Found a great recipe for Apricot butter in which I substituted the apricots for strawberries.
Found an entire tray of strawberries (over-ripe) being thrown out for $3.00.
Picked them over, washed them, threw them in saucepan with some lemon juice and 1/3 cup of water.
Simmered them with their hulls on for 10 mins. Strained through muslin bag. Threw out solids, kept beautiful bright red strawberry juice.
Added 1 cup of sugar to 2 cups of strawberry juice, simmered again for 15 minutes, stirring occasionally.
Cooled & bottled in sterilized jars.
YUMMO - one of my best, quickest, cheapest recipes yet.
Lovely on French toast, pancakes & icecream!
